Chicken salad is an ultimate weekday lunch.

Chicken salad is my go-to meal prep for healthy + filling weekday lunches. You can easily whip up a batch that will serve you and your whole fam for multiple days in a row.

When choosing chicken, I recommend splurging on free-range organic chicken breasts and nixing the rotisserie.

I know what you’re thinking – rotisserie chickens are super convenient. True, but most are injected with sugar, salt, and preservatives. It’s OK to have them occasionally, but when you can swing it, go for the high quality!

The best part about chicken salad? There are ENDLESS ways to flavor and serve it, so you’ll never get bored. I’m going to show you how with three of my favorite recipes.


 

Curry Chicken Salad

You Need:

  • 1 c. shredded chicken breast (Cook in a crock pot or bake for 30 min at 350 degrees and shred once the chicken has cooled)
  • 1/4 c. chopped celery
  • 1 tbsp chopped green onion
  • 3 tbsp Primal Kitchen Avocado Mayo
  • 1/4 c. chopped walnuts
  • 1/2 tbsp dijon mustard
  • 1/4 c. shredded carrots
  • 2 tsp curry powder
  • 1/4 c. chopped grapes
  • 1/4 tsp turmeric powder
  • 1/2 tsp garlic powder
  • Sea salt + pepper to taste

Make It Happen:

① After chicken breast is shredded, combine all the ingredients in one bowl & mix well.

② Serve on Ezekiel or sweet potato toast or on top of big green salad.


Guacamole Chicken Salad

You Need:

  • 1 c. shredded chicken breast
  • whole lime, juiced
  • 1 ripe avocado
  • 1/4 c. chopped red onion
  • 1/4 c. chopped cilantro
  • 1/2 of a jalapeño, diced (optional if you like things spicy)
  • Sea salt + pepper to taste

Make It Happen:

① Mash your avocado in a bowl.

② Add all other ingredients and mix until well combined.

③ Serve inside a warm Siete wrap (I toast mine in a frying pan with ghee butter) or on top of Simple Mills Jalapeño crackers for a killer snack that your co-workers will be drooling over.


Spicy Mexican Chicken Salad

You Need:

  • YOU NEED:
    • 1 c. shredded chicken breast
    • 1/4 c. red onion, diced
    • 1/2 jalapeno, diced
    • 3 tbsp Chipolte Primal Kitchen Mayo
    • 1 lime, squeezed
    • 1/4 c. red bell pepper, diced
    • 3 tsp Organic Mexican Seasoning
    • 1/4 c. orange bell pepper, diced
    • Sea salt + pepper to taste

Make It Happen:

① Combine all ingredients & mix well.

② Highly suggest you serve inside a Siete wrap and Siete or Jackson’s Honest sweet potato chips AND pickles to truly live your best lunch life.
