Is there really anything better than perfectly cooked pancakes?
Ok, perhaps there are plenty of things, but I give this pancake recipe my stamp or approval. They come out perfectly every single time! Plus, they are gluten-free, sugar-free, dairy-free, and absolutely delicious.
- 1/2 cup almond flour
- 1/3 cup tapioca flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 3-4 eggs
- 1/4 cup nut milk
- 1 tbsp maple syrup
- 1 tsp apple cider vinegar
- 1 tsp vanilla extract
- Pinch of sea salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 banana, sliced
- Sprinkle of Lily’s chips
- Coconut oil cooking spray
MAKE IT HAPPEN:
① Spray a large non-stick frying pan with coconut oil place on medium low heat.
② In a large bowl, mix dry ingredients together. In another bow, mix wet ingredients together. Then combine both and mix until complete combined.
③ Form 4 pancakes in your pan and add sliced banana and chocolate chips on top.
④ Cook 3 min per side or until golden brown. Flip and cook for another 2-3 minutes.
⑤ Spread with ghee, butter, or coconut oil + a light drizzle of maple syrup or raw honey. I sometimes will top with coconut cream or plain Greek yogurt + cinnamon if I’m looking to feel full for hours.
