Is there really anything better than perfectly cooked pancakes?

Ok, perhaps there are plenty of things, but it’s 100% guaranteed that pancakes will make your mornings much sweeter.



THE RECIPE

YOU NEED:

  • 1/2 can pumpkin purée⁣⁣ ⁣⁣
  • 1/2 cup gluten free flour⁣⁣
  • 1 tsp vanilla extract⁣⁣
  • 1/2 tsp baking powder⁣⁣
  • 1 tbsp ground flax seed⁣⁣
  • 2 tsp pumpkin pie spice⁣⁣
  • 1 tbsp hemp seeds⁣
  • Pinch of sea salt
  • Handful frozen blueberries
  • Coconut oil⁣⁣ or spray

MAKE IT HAPPEN:

① Spray a large non-stick frying pan with coconut oil place on medium low heat.

② In a large bowl, mix everything together except the blueberries.

③ Form 2 pancakes in your pan.

④ Cook 3-4 min per side or until golden brown. Flip and sprinkle frozen blueberries on top and cook for another 3-4 min.

⑤ Spread with ghee, butter, or coconut oil + a light drizzle of maple syrup or raw honey. I sometimes will top with coconut cream or plain Greek yogurt + cinnamon if I’m looking to satiated for hours.
