It’s 100% guaranteed that pancakes will make your Sundays much sweeter.



THE RECIPE

YOU NEED:

  • 1/2 can pumpkin purée⁣⁣ ⁣⁣
  • 1/2 cup gluten free flour⁣⁣
  • 1 tsp vanilla extract⁣⁣
  • 1/2 tsp baking powder⁣⁣
  • 1 tbsp ground flax seed⁣⁣
  • 2 tsp pumpkin pie spice⁣⁣
  • 1 tbsp hemp seeds⁣
  • Pinch of sea salt
  • Handful frozen blueberries
  • Coconut oil⁣⁣ or spray

MAKE IT HAPPEN:

① Spray a large non-stick frying pan with coconut oil and heat med low.

② Mix everything together except blueberries. Form 2 pancakes in your pan.

③ Cook 3-4 min per side or until golden brown. Flip and sprinkle frozen blueberries on top and cook for another 3-4 min.

④ Spread with ghee, Kerry Gold Butter, or coconut oil + a light drizzle of maple syrup or raw honey. I sometimes mix it up and top with coconut cream or plain Greek yogurt + cinnamon.
