MAMMA MIA. This is a favorite easy night dinner of mine.
Literally, so quick to make and super satisfying!
- Butternut squash noodles, pre-spiralized from Whole Foods
- 1/2 yellow onion, diced
- 1 poblano pepper, diced
- 1 red bell pepper, diced
- 2 garlic cloves, peeled + diced
- 1 organic chicken or beef sausage, sliced
- 1/2 jar Rao’s tomato sauce
- Chili flakes, to taste
- Garlic powder, to taste
- Black pepper, to taste
MAKE IT HAPPEN:
① Lightly sauté onion, peppers, garlic in extra virgin olive oil in a large frying pan over medium heat for about 4 minutes.
② Spread veggies to side of pan and add sliced sausage in center of pan to cook.
③ Cook sausage 3-4 min on each side.
④ Add the container of butternut squash pre-spiralized noodles and stir everything to combine.
⑤ Pour tomato sauce on top and add spices.
⑥ Serve hot and enjoy it.
