MAMMA MIA. This is a favorite easy night dinner of mine.

Literally, so quick to make and super satisfying!


THE RECIPE

YOU NEED:

✔️  butternut squash noodles, pre-spiralized from Whole Foods
✔️  1/2 yellow onion, diced
✔️  1 poblano pepper, diced ⁣⁣⁣
✔️  1 red bell pepper, diced
✔️  2 garlic cloves, peeled + diced
✔️  1 organic chicken or beef sausage, sliced
✔️  1/2 jar Rao’s tomato sauce⁣⁣⁣
✔️  chili flakes, to taste
✔️  garlic powder, to taste
✔️  black pepper, to taste

MAKE IT HAPPEN:

① Lightly sauté onion, peppers, garlic in extra virgin olive oil in a large frying pan over medium heat for about 4 minutes.

② Spread veggies to side of pan and add sliced sausage in center of pan to cook.

③ Cook sausage 3-4 min on each side.

④ Add the container of butternut squash pre-spiralized noodles and stir everything to combine.

⑤ Pour tomato sauce on top and add spices.
⁣⁣
⑥ Serve hot and enjoy it.
