Quesadillas are usually a rich, cheesy, and let’s be honest a not-so-healthy food choice.

But not today my friends!

The days of greasy quesadilla fingers are LONG gone as I’m going to teach you how to make a healthier version that is gluten-free and packed with good-for-you ingredients.

You can switch up the ingredients, but my favorites to include are beans, goat cheese, peppers, and onion. I will add Mexican spiced chicken or ground turkey when I have it on hand as it makes it more filling, but if you omit animal protein, it still tastes delicious!


THE RECIPE

YOU NEED:

– 1 can refried black beans
– 4-6 mini bell peppers, thinly sliced
– 1/2 jalapeño, thinly sliced
– 1/4 onion, diced
– Cilantro, finely chopped
– Goat cheese (use almond milk cheese if dairy-free)
– Mexican seasoned ground turkey (optional)
– Mexican seasoning
– 2 Siete Foods almond flour wraps
– Hot sauce
– Guacamole

MAKE IT HAPPEN:

① Sauté veggies in skillet with oil for 5 min, then set aside.⁣

② In a small pot, heat refried beans for 5 min.⁣

③ Add butter or avocado oil to warm skillet and place tortilla down flat. Layer slices of goat cheese, refried black beans, sautéed veggies, cilantro, ground turkey (if using), and more goat cheese before placing the second tortilla on top.⁣

④ Cook for 3-5 min on medium heat. Carefully flip and cook for an additional 3-5 min.⁣

⑤ Top your quesadilla with guac for some more healthy fats + a drizzle of your favorite hot sauce for a spicy kick⁣.
