It keeps things quick + easy with minimal ingredients, but contains the flavor and nutrients to keep you feeling super satisfied.

- 1 tsp ghee or butter
- ½ cup spinach
- 2 eggs
- 2 tortillas (I use Siete Foods)
- 2 tbsp fresh dill
- 4 tbsp sun-dried tomato hummus (I use Majestic Garlic)
- Drizzle extra virgin olive oil
- Salt & pepper, to taste
- Red pepper flakes, to taste
- Hot sauce, to taste
MAKE IT HAPPEN
① Heat ghee or butter in skillet on medium heat.
② Crack eggs into skillet and turn down heat to low. Sprinkle salt and chili flakes over the eggs while they cook. Cook for about 4-5 minutes, or until edges are crispy.
③ In separate skillet, heat 1/2 tsp of ghee or butter and crisp up the tortillas one at a time; about 60 seconds per side or until slightly golden. Make sure not to use too much butter or the tortillas will get soggy.
④ Spread hummus on tortilla; then add spinach, a drizzle of olive oil, the fried egg, fresh dill, and hot sauce. Add extra spices and you’re ready to dig in.
