It’s a real bummer when you are allergic to nuts and every healthy bar on the market or online recipe contains them. I’ve been there with food allergies myself, which is why I am always working on coming up with recipes that people with food sensitivities can enjoy.
These Carrot Cake Snack Bites may be nut-free, gluten-free, refined sugar-free, dairy-free, and vegan, but they will still WOW your tastebuds.
The Recipe
YOU NEED:
- 1/4 cup dried white mulberries
- 1/2 tsp ground ginger
- 1/2 cup rolled oats
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tbsp ginger, peeled then grated
- 1 tbsp apple butter
- 2 tbsp coconut flakes
- 2 tbsp coconut flour
- 2 tbsp ground flax seed
- 3 tbsp hemp seeds
- 4 carrots
MAKE IT HAPPEN:
① Peel then grate your carrots using a food processor or cheese grater.
② Place grated carrots in paper towel and squeeze out moisture.
③ In a food processor or high-powered blender, add all ingredients and mix until well combined.
④ Roll the carrot cake mix into small balls and place each on a parchment paper-lined plate. Then, move the bites into the fridge for at least 1 hour to set.
⑤ Store in the fridge for up to 7 days.
