Not kidding when I tell you that after one bite of this bread, I announced it was the best thing I’d EVER created in the kitchen! Dramatic? Perhaps. But, trust, don’t sleep on this recipe!

THE RECIPE
YOU NEED:
Apple Loaf Ingredients
- 4 eggs
- 1/3 cup full fat coconut milk (I use the brand Native Forest)
- 1/4 cup maple syrup
- 4 tbsp apple butter
- 3 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 2/3 cup coconut flour
- 3 tbsp tapioca flour
- 1 tbsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp sea salt
- 1 tsp baking soda
- 1 1/2 apples, peeled and diced
Caramel Sauce Ingredients
- 1 tbsp maple syrup
- 1 1⁄2 tbsp coconut oil
- 2 tbsp almond butter
MAKE IT HAPPEN:
① Preheat oven to 350 degrees F and line an 8×4 loaf pan with parchment paper.
② Combine dry ingredients in a medium bowl and set aside.
③ Whisk together eggs, coconut milk, vanilla, maple syrup, apple butter, and melted coconut oil in a large bowl until well combined.
③ Stir dry ingredients into wet until fully mixed. Batter will be thick. Fold in 1 cup of chopped apples, leaving some to sprinkle over the top.
④ Transfer batter to prepared loaf pan and spread, then sprinkle top with remaining apples.
⑤ Bake for 50-55 minutes or until top is golden brown and a knife inserted near the center of the loaf comes out clean.
⑥ Cool in the pan about 20 minutes.
⑦ While bread cools, stir caramel ingredients in a pot on low heat for 3-5 minutes or until a sauce thickens.
⑧ Drizzle bread with caramel sauce and enjoy!
