The perfect summer salad has arrived, and it’s so easy to make! Plus, look ma, no lettuce! I mean, you can add in some chopped lettuce if you’d like, but this salad is loaded with the perfect ratio of protein, fat, and veggies, so you honestly don’t even need it.
- 1 Can Chickpeas, drained & rinsed
- 1 Large English Cucumber
- 1 Cup Cherry Tomatoes
- 1 Ripe Avocado
- 1/2 Red Onion
- 1-2 Lemons
- 3 TBSP Extra Virgin Olive Oil
- 2-3 TBSP Goat or Feta Cheese
- Pinch of Sea Salt
- Pinch of Black Pepper⠀⠀
MAKE IT HAPPEN:
① Dice up the onion, cucumber, cherry tomatoes, and avocado and then place in a bowl. If you’re going for an aesthetic, you can form piles of each ingredient to make it look pretty for a photo before you toss it.
② Pat the drained and rinsed chickpeas with paper towels and ensure they are dry before adding them to the bowl.
③ Drizzle the veggies and chickpeas with olive oil, lemon, salt, and pepper and toss to combine.
④ Sprinkle in the goat or feta cheese and enjoy.
