asian lettuce cups

These turkey Asian lettuce cups are the perfect choice for an easy low-carb lunch or dinner. They have received a stamp of approval from many of my family and friends, and are easy to whip up on a busy week night!

servings: 2-3

Cook time: 30 min

ingredients:

  • 1 lb ground turkey

  • 1/4 c. onion, diced

  • 1/2 c. mushrooms, diced

  • 1/2 c. walnut or cashew halves

  • 1/2 tbsp garlic + onion powder

  • 1 c. TJ’s broccoli + kale slaw

  • 2 garlic cloves, diced

  • 2 tbsp soy sauce

  • 2 tbsp teriyaki

  • 4 garlic cloves

  • 3 green onions, diced

  • Salt, pepper & red chili flakes

how to make it:

  1. Sauté onion, mushroom, garlic for 5 minutes and set aside on a plate. 

  2. Add turkey and cook for about 5–6 minutes, breaking apart with a wooden spoon.

  3. Add in all the sauce and seasoning. 

  4. Add back in the sautéed veggies and toss in the slaw and walnuts. 

  5. Stir everything together and cook for another minute or two. 

  6. Fill up your romaine cups with the turkey treat. 

  7. Drizzle with extra soy sauce and top with green onions.
