Here's what went down: I whipped up this recipe, took my first bite, and at the top of my lungs, I yelled, "OMG, this is the best thing I have ever made!" My husband, rolling his eyes, thought I was being dramatic. But after just one bite, he conceded with a heartfelt "Damn, that’s good." The ingredients:

APPLE LOAF INGREDIENTS

  • 1/4 tsp nutmeg

  • 1/4 tsp sea salt

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1 tbsp cinnamon

  • 1/3 cup full fat coconut milk (I use Native Forest)

  • 1/4 cup maple syrup

  • 2/3 cup coconut flour

  • 1 1/2 apples, peeled and diced

  • 3 tbsp coconut oil, melted

  • 3 tbsp tapioca flour

  • 4 tbsp apple butter

  • 4 eggs

CARAMEL SAUCE INGREDIENTS

  • 1 tbsp maple syrup

  • 1 1⁄2 tbsp coconut oil

  • 2 tbsp almond butter

how TO make iT:

  1. Preheat oven to 350 degrees F and line an 8×4 loaf pan with parchment paper.

  2. Combine dry ingredients in a medium bowl and set aside.

  3. Whisk together eggs, coconut milk, vanilla, maple syrup, apple butter, and melted coconut oil in a large bowl until well combined.

  4. Stir dry ingredients into wet until fully mixed. Batter will be thick. Fold in 1 cup of chopped apples, leaving some to sprinkle over the top.

  5. Transfer batter to prepared loaf pan and spread, then sprinkle top with remaining apples.

  6. Bake for 50-55 minutes, or until the top is golden brown and a knife inserted near the center of the loaf comes out clean.

  7. Cool in the pan about 20 minutes.

  8. While bread cools, stir caramel ingredients in a pot on low heat for 3-5 minutes, or until a sauce thickens.

  9. Drizzle bread with caramel sauce and enjoy!
