how TO make iT:
Preheat oven to 350 degrees F and line an 8×4 loaf pan with parchment paper.
Combine dry ingredients in a medium bowl and set aside.
Whisk together eggs, coconut milk, vanilla, maple syrup, apple butter, and melted coconut oil in a large bowl until well combined.
Stir dry ingredients into wet until fully mixed. Batter will be thick. Fold in 1 cup of chopped apples, leaving some to sprinkle over the top.
Transfer batter to prepared loaf pan and spread, then sprinkle top with remaining apples.
Bake for 50-55 minutes, or until the top is golden brown and a knife inserted near the center of the loaf comes out clean.
Cool in the pan about 20 minutes.
While bread cools, stir caramel ingredients in a pot on low heat for 3-5 minutes, or until a sauce thickens.
