It's like a salad without all the boring lettuce parts—just kidding, I love my greens. But let's be real, some days you need to shake up your bowl, and this summer chickpea salad does just that.

ingredients:

  • 1 can chickpeas, drained & rinsed

  • 1 large English cucumber

  • 1 cup cherry tomatoes

  • 1 ripe avocado

  • 1/2 red onion

  • 1-2 lemons

  • 3 tbsp extra virgin olive oil

  • 2-3 tbsp goat or feta cheese

  • Sprinkle of sea salt

  • Pinch of black pepper

here’s how you make it…

  1. Dice up the onion, cucumber, cherry tomatoes, and avocado and then place in a bowl. If you’re going for an aesthetic, you can form piles of each ingredient to make it look pretty for a photo before you toss it.

  2. Pat the drained and rinsed chickpeas with paper towels and ensure they are dry before adding them to the bowl.

  3. Drizzle the veggies and chickpeas with olive oil, lemon, salt, and pepper and toss to combine.

  4. Sprinkle in the goat or feta cheese and enjoy.
