Chicken Caesar Pita Pockets

“I never know what to eat for lunch.” Consider that problem solved! These easy pita pockets make for a satisfying lunch that comes together in no time. Plus, you can meal prep a big batch for quick weekday lunches. Let me know if you try them out!

ingredients:

  • 2 pasture-raised chicken breasts, grilled or baked

  • 1 head romaine lettuce, chopped

  • 1 cup cherry tomatoes, sliced in half

  • Caesar dressing (I use @motherraw or @primalkitchenfoods )

  • Parmesan cheese, grated

  • 1/4 red onion, thinly sliced

  • 1/4 cup pepperoncinis

  • Pita bread pockets (I used @foodforlifebaking)

  • Sea salt + black pepper, to taste

here’s how you make iT:

  1. Grill or bake the chicken breasts and cut them into bite-sized pieces.

  2. Chop the romaine lettuce and slice the cherry tomatoes and red onion.

  3. In a large bowl, toss the chopped lettuce, sliced tomatoes, red onion, and chicken with Caesar dressing.

  4. Toast the pita bread pockets until warm and slightly crispy.

  5. Fill each pita pocket with the chicken Caesar salad mixture.

  6. Sprinkle grated Parmesan cheese over the top.

  7. Season with sea salt and black pepper to taste.
